2 medium-sized eggplants
1 tbsp extra virgin olive oil
2 tbsp ghee *see note
2.5 tsp cumin seeds
1 large yellow onion, chopped fine (yield ~4 cups)
2 tbsp diced garlic
2 tbsp diced ginger root
2 cup diced tomato
1 tsp ground coriander
1 tsp turmeric
1 tbsp garam masala
½ tsp Himalayan rock salt
¼ cup roughly chopped fresh cilantro, divided
