Use minced fresh chicken breast instead of ground chicken

2 small yellow onions (one halved, one diced)
1 pound ground chicken
1 egg (preferably at room temperature)
1/3 cup seasoned (Italian) breadcrumbs
2 tsp oregano
1/2 tsp crushed red chili flakes
1/4 cup olive oil, divided
2 cloves garlic, minced
2 tablespoons tomato paste
1/2 cup dry white wine
1 15-ounce can fire roasted tomatoes
1 cup crushed tomato (or plain tomato sauce)
6 ounces provolone cheese

salt & ground black pepper, to season
