Skillet Maple-Mustard Chicken and Broccoli with Vinaigrette

For the chicken:
1 tablespoon canola oil
8 bone-in chicken thighs (about 2 to 2 1/2 pounds)
Kosher salt
Freshly ground black pepper
1/3 cup maple syrup
1/4 cup Dijon mustard
2 tablespoons whole-grain mustard
1 tablespoon cider vinegar
1 teaspoon soy sauce or tamari

For the broccoli:
1 head broccoli (about 1 1/2 pounds), or 12 ounces broccoli florets
2 tablespoons citrus vinaigrette, plus more as needed
