Slow Cooked Beef Curry

Notes: 

Used half amount of meat to double amount of sauce.

Added potatoes, pumpkin, spinach

Ingredients: 

500g of beef steak cubed,
1 large onion diced
1 tablespoon of minced ginger
2 tablespoons of minced garlic
1 teaspoon of tumeric
2 tablespoons of mild curry powder
800ml coconut cream or milk
4 teaspoons of cornflour
2 tablespoons of soy sauce
2 tablespoons of packed brown sugar


Add diced beef & onion to slow cooker

Combine all other ingredients well in a jug (except the additional cornflour in last ingredient), and pour over beef & onion

Cook on low for 7hrs - will easily extend to 8hrs cooking time if needed

In the last half hour of cooking mix additional cornflour with a little water and add to slow cooker to thicken

Serve with rice, or mashed potato, or cauliflower mash
