Slow-Cooked Bolognese Sauce

Ingredients: 

1 Tablespoon olive oil
1 medium onion, finely chopped
2 celery stalks, finely chopped
1 medium carrot, finely chopped
2-3 cloves of garlic, minced
1-2 pounds ground beef
1/8 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon pepper
1 cup milk (whole or 2-percent)
1 cup white wine
2 28-ounce cans of whole peeled tomatoes, drained and finely chopped (juices reserved)
1 cup reserved tomato juices
