Slow-Cooked Collard Greens

Ingredients: 

2 lbs collard greens
3T olive oil
1 onion, diced
2 garlic cloves, smashed
2 bay leaves
1 smoked ham hock
2 quarts chicken broth
2T cider vinegar
2T sugar
1-2t hot sauce


  1. Prepare greens
  2. Heat olive oil over medium heat in large pot.
  3. Add onion, garlic, bayleaves and ham hock.  Cook until onions are soft and starting to brown, 8-10 min.
  4. Pack in greens.
  5. Add broth, vinegar and sugar.
  6. Bring to boil turning the greens occasionally as they wilt.
  7. Lower to simmer, cover pot and cook for 45 minutes.
  8. Add salt and pepper to taste.
  9. Cover and let cook for 15 more minutes.
  10. Remove bay leaves and serve.
