Slow Cooker BBQ Pulled Pork

SO easy. The cooked onions end up being one of the best parts.


4-5 pounds boneless pork shoulder, skin removed
2 cups chicken broth
10 cloves garlic, thinly sliced
2-3 onions, thinly sliced
2 tablespoons brown sugar
2 tablespoons chili powder
2 tablespoons kosher salt
1 tablespoon cumin
1 teaspoon cinnamon
BBQ sauce

  1. Place the onions and garlic in an even layer in the slow cooker and pour in the broth. Combine the sugar, chili powder, salt, cumin and cinnamon in a small bowl. Rub the pork with the spice mixture and place the meat on top of the onions and garlic. Cover and cook until the pork is fork tender, about 6-8 hours on high or 8-10 hours on low.
  2. Remove the pork and about 1/4 of the onions and shred. Add in barbecue sauce a bit at a time, until you've reached the amount of flavor you'd like. 
  3. Keep the cooking liquid and remaining onions in the crockpot, and cook until sauce has reduced a bit. You can top the BBQ pork with this, or use it for other purposes.
