Slow Cooker Beef & Barley Soup

Notes: 

Can be made with 1.25c leeks/onions if you like. We can't eat onions in our house so we make this without. Thanks to Holly on the Facebook Slow Cooker Recipes group for this one.

Ingredients: 

1 to 1.5lb stewing beef, cut into small cubes
3 medium carrots (about 1 1/4 cups), peeled & sliced
2 celery stalks (about 3/4 cups), sliced
5 c water
1 tsp dried parsley flakes
1 tsp sugar
2 tbsp beef bouillon powder (or cubed bouillon suitable for making 2 cups broth)
1/2 c dry pearl barley
15oz can tomato sauce


  1. Place all ingredients in large (5 qt) slow cooker.  Stir gently.  Cover.
  2. Cook on low heat for 8-10 hours or on high heat 4-5 hours.
  3. Makes 8-9 generous servings (10 1/4 cups)
