Slow Cooker Chicken with Leeks and Sun-Dried Tomatoes

2-3 leeks (1 1/2 cups) white part and light green only, roughly chopped
4-6 chicken breasts
2 tsp butter, divided
3 cloves garlic, minced
3 tablespoons sun-dried tomatoes in olive oil
1/2 cup white wine
1 can fat free low sodium chicken broth
salt and fresh pepper to taste
Parsley, basil and oregano to taste

  1. Throw all ingredients in slow cooker.
  2. Cook on high about 5 hours, or on low about 8 hours.
  3. Remove, serve over rice or crusty bread. Make sure to soak up all that broth!
