Slow Cooker Hash Brown Casserole

Notes: 

Straight to the slow cooker: You can add the onion and bell pepper to the casserole raw without sautéing first. You'll miss out on some flavor, but the vegetables will cook through.

Ingredients: 

Cooking spray
4 large eggs
1 cup whole milk
8 ounces sour cream
4 ounces cream cheese, at room temperature
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground mustard
1 pound uncooked pork sausage, casings removed
1 tablespoon unsalted butter
1 small onion, diced
1/2 medium red bell pepper, diced
1 (30-ounce) package frozen shredded hash browns (do not thaw)
2 cups shredded sharp cheddar cheese (8 ounces), divided
