Slow Cooker Lentil and Ham Soup

1 cup dried lentils

1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion

2 cloves garlic, minced
1 1/2 cups diced cooked ham (3/4 lb.)
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/2 teaspoon dried oregano
1 bay leaf
1/4 teaspoon black pepper
32 ounces chicken broth

  1. Saute the onions, carrots and celery in a little butter or bacon grease in a pan on the stove for a more flavorful soup. 
  2. Put everything in a 3 1/2 qt. crockpot.  Set on HIGH for 2 hours then LOW for 1 1/2 hrs. or until the lentils are soft but bot nushy. You may want to add a cup or so of water later.  Discard the bay leaf before serving.
