Slow Cooker Spiced Porridge

Makes 8 1-cup servings


2 cups steel-cut oats
8 cups water
1/2 cup dried cranberries
1/2 cup chopped apricots
1/2 cup chopped dates
1/2 cup chopped figs or raisins
1 1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/8 teaspoon nutmeg
1/8 teaspoon cloves
1/4 cup brown sugar
1/2 vanilla bean, split, or 1 teaspoon vanilla extract
1/2 teaspoon salt
zest of 1 orange

Toppings: chopped roasted nuts, jam, fresh fruit, more dried fruit, milk, yogurt, leftover eggnog
