Smoked Salt

Notes: 

We like fleur de sel and Maldon sea salt flakes—the former for its mineral-y flavor and large crystals, the latter for its hollow-pyramid-shaped crystals that melt away on the tongue. To avoid sharp or musky flavors, use milder-flavored woods like pecan or alder. This recipe will not work on a gas grill.

Kettle grill
Chimney starter
Charcoal
2 disposable aluminum pie pans
5 wood chunks (slightly smaller than fist-sized)
2 cups wood chips

⅔ cup salt
