Soba Noodle Nest Soup

Ingredients: 

FOR SOUP:
Olive oil, to cover bottom of pan
1 onion, chopped
2 cups chopped mushrooms
8 cups vegetable or dashi broth
Shoyu, to taste

FOR NOODLES:
500 g soba noodles
1 Tbsp salt, for water
Olive oil, to toss noodles

FOR EGGS:
4 eggs
2 Tbsp vinegar (white, rice, or apple cider vinegar)
Salt, to taste
Pepper, to taste

GARNISH IDEAS:
1 bunch mizuna, cut into 4″ lengths
1 bunch fresh green herbs, roughly chopped
2 scallions, sliced into rounds
1/8 cup sesame seeds, toasted
Cracked red pepper, to taste
Lemon slices
