1 tablespoon mixed Italian herbs
1 tablespoon tomato paste
3 cups (13 1/2 ounces) all purpose flour
1 1/2 teaspoons salt
2 tablespoons olive oil (plus more for drizzling)
1 1/4 cups water
4 ounces cheese (your choice of type) thinly slices or shredded
