1 lb lean ground beef
1 medium onion, rough chopped
3 cloves garlic, minced
1/2 small cabbage, chopped
1 can (15 oz) diced tomatoes, undrained
or three fresh chopped Roma tomatoes (seeded)
1 cup tomato sauce
1 teaspoon ground black pepper
1 teaspoon sea salt
1 teaspoon paprika
pinch of red pepper flakes
1 teaspoon Cajun Seasonings (optional)
In a large skillet over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender. No need to drain if only a few tablespoons of fat. Add the garlic and continue cooking for 1 minute.
Add the chopped cabbage, tomatoes, tomato sauce and spices. Bring to a boil. Cover and simmer for 20 minutes, or until cabbage is tender.
