Spanakopita (Greek Spinach Pie)

For the phyllo dough:

3 cups all purpose flour
1/3 cup olive oil
lukewarm water enough to make a pliable dough

For the filling:

1/2 kg/1 pound spinach
4 spring onions
1 leek
1 bunch dill
1/4 cup rice
2 Tbsp olive oil
1 tsp salt
