Spiced Carrot Salad


1 pound carrots, peeled and sliced into 1/4 inch thick slices
1/2 cup of pitted dates, chopped
2 Tablespoons lemon juice
4 Tablespoons orange juice
1 clove garlic, minced
1/4 teaspoon cinnamon
1/2 teaspoon cumin
1/2 teaspoon coriander
1/4 teaspoon sweet paprika
1/2 teaspoon coarse salt
2 Tablespoons extra virgin olive oil
2 tablespoons chopped mint leaves
1 tablespoons chopped flat-leaf parsley
