Spicy Avocado-Tomatillo Dressing + Mushrooms.


Salsa Verde Dressing
3 medium tomatillos, sliced into quarters & roasted
1-2 cloves garlic
1/2 - 3/4 cup chopped cilantro, stems and leaves (3/4-1 cup if you are a cilantro-lover and like your dressing extra green like me!)
1 small jalapeno, seeds removed
2 limes, juiced
1/2 white onion, chopped
1 medium avocado, diced
1/2 tsp salt (or to taste)
pinch of black pepper

Red Cabbage Slaw - inspired by this recipe
2 cups shredded red cabbage
3 Tbsp tahini
2 Tbsp maple or agave syrup
pinch of black pepper
3 Tbsp lime or lemon juice OR apple cider vinegar
1/4 tsp salt

Balsamic Shiitakes:
1 1/2 cups shiitake mushrooms, sliced into strips/stems removed
balsamic vinegar (start with 2 Tbsp and add more to taste)
fine black pepper (start with 1/4 tsp and add to taste)
pinch of salt (optional)
1/2 tsp chipotle powder (optional for smoky heat)
optional: pinch of nutritional yeast

1 bunch of fresh long leaf arugula (or another green or mixed greens)
1 Tbsp cold-pressed vegetable oil (any variety)
pinch of salt and pepper
squeeze of lemon or lime juice

Dressing modifications: Add 2-3 Tbsp nuts or seeds blended or folded in (walnuts, toasted pepitas, candied pistachios, hemp seeds..) Or for a sweet spin, try adding some roasted corn to the dressing blend or folded in.
