Spicy Charred Sweet Corn and Tomatoes


"This is my new favorite summer side dish – a medley of charred sweet corn and tomatoes, accented by a pop of hot peppers that creates a delicious spicy charred sweet corn and tomato side dish. My favorite part is finishing the dish with a few splashes of tangy hot sauce. You can pile this charred sweet corn on top of salads or roasted chicken or steak, so it’s super versatile!"

Servings: 2-3


2 ears of corn, husked and cut from the cob
1 pint cherry tomatoes, halved
1-2 small hot red peppers (such as hot cherry peppers), trimmed and diced
1 tablespoon olive oil
Salt and pepper to taste
Hot sauce, optional, for serving
