Spicy Jalapeno Chili

Notes:

This is our family's favorite soup recipe! Careful - it is very spicy! This freezes well and also is good over rice.

I made some changes to the recipe on Skinnytaste.com, but that was the original source!

Ingredients:

1 medium white onion, diced (if you don't have an onion it can be replaced with 2 tsp onion powder)
3 cloves minced garlic
1 red bell pepper, diced
2 jalapeños diced (You can remove seeds from one or both to reduce the spice level.)
1 large sweet potato, 14 oz, Cubed (I use the Archer Farm’s cubed sweet potatoes – it’s a 16 oz bag)
2 lbs lean ground beef (can use turkey or chicken if desired)
2 tsp smoked paprika
2 tsp chili powder
2 tsp dried oregano
2 tsp kosher salt
1 tsp ground cumin
1/4 – 1 tsp red pepper flakes (add more or less depending on desired spice level.)
1 (14 oz) can petite diced tomatoes
2 - 3 cups reduced sodium chicken broth (more or less as desired/needed)
Goat Cheese
French baguette or bread

  1. Brown the ground beef in a Dutch oven or stock pot. Drain & rinse, set aside
  2. In the same pot add a bit of oil and sauté the onion, red bell pepper and jalapeno peppers for about 5 minutes
  3. Add the sweet potato and sauté another 5 – 10 minutes
  4. Add back the hamburger and all ingredients except goat cheese (garlic, paprika, chili powder, oregano, salt, cumin, red pepper flakes, petite diced tomatoes, chicken broth)
  5. Bring to boil, reduce heat to low, cover and simmer for 1 – 2 hours (until sweet potatoes are soft – it usually only takes 1 hour max for me, sometimes less)
  6. Serve topped with goat cheese and with bread. You can also top with diced avocado.
