Spicy Shrimp and Quinoa

Notes: 

I only had 16ish shrimp and didn't really measure seasonings
I used left over corn on cob so it was already cooked

Ingredients: 

Lemon or Lime Juice
olive oil
• 1 teaspoon chili powder
• 1 teaspoon ground cumin
• 1/4 teaspoon black pepper
• 1 teaspoon hot pepper sauce
• 1/2 teaspoon Spanish smoked paprika
• 1 garlic clove

24 large shrimp, peel on or off deveined (about 1 pound)

Quinoa
Chicken Broth
Veggies (Corn, Bok Choy, Spinach, Cauliflower)
Almonds and yellow raisins would be a good addition


  1. Marinate Shrimp
  2. Make quinoa with Chicken Broth instead of water set aside
  3. Pan fry shrimp
  4. lightly cook vegetables (spinach and bok choy in pan, cauliflower and corn steamed/boiled)
  5. Add shrimp and veggies to quinoa, squeeze lemon juice add salt and pepper, cover and heat on medium
