Spicy Thai Chicken Lettuce Wraps with Peanut Sauce


Peanut Sauce
1 tablespoon peanut butter
1 tablespoon agave nectar
1 1/2 teaspoons soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon ground ginger
1/2 teaspoon sriracha

Chicken Lettuce Wraps
3 pieces Gardein Chick'n Scallopini, slightly thawed and diced
1 tablespoon olive oil
1/2 cup diced yellow onion
4 green onions, sliced, divided
1/3 cup carrots, grated
2 cloves garlic, minced
Half of an 8-ounce can sliced water chestnuts, drained and diced
1/4 cup peanuts, crushed
1/4 cup cilantro, chopped, divided
1/2 teaspoon pepper
1 teaspoon Sriracha sauce
1 teaspoon soy sauce
4 large iceberg lettuce leaves, to serve
