Sponge flan / fat less sponge

4 ounces Plain flour; sifted
4 ounces Castor Sugar
4 Eggs; Separated
0.5 teaspoon Baking Powder

Fatless Sponge Preparation

use a clean grease free bowl ( scald a bowl with boiling water and dry with paper towel )

Sift the flower,baking powder and set aside

separate the eggs put the white of the egg into the clean bowl whisk the egg whites adding the caster sugar a little at a time until the mixture is stiff

Beat the egg yolks with a fork and add to the egg whites beat for a few seconds

fold in the flour carefully

divide the mixture between two sandwich tins or put into a 8' round cake tin bake in the oven for 20 to 25 minutes

Oven temp 350F (180 c / 160 fan ) gas mk 4

you can sandwich the cake together with Jam and whipped fresh crean or butter icing, or use it to make fruit flans.
