3 pounds asparagus ( trimmed and cleaned)
2 tablespoons olive oil
continued for the soup
2 cups vegetable broth ( low sodium) divided
medium yellow onion – diced
2 tablespoons earth balance
2 tablespoons flour
3/4 cup soy milk
1 teaspoon salt
fresh ground pepper to taste
2 teaspoons lemon juice
2 tablespoons tofutti sour supreme (optional)
