Squash Blossom Quesadillas with Bacon and Tomatoes

Ingredients: 

4 slices thick-cut bacon, cut into 1-inch pieces
1/2 medium white onion, diced (about 3/4 cups)
1 jalapeƱo, stemmed, seeded, and diced
Kosher salt
1 medium clove garlic, minced (about 1 teaspoon)
20 squash blossoms, stems and stamens removed, rinsed under cold water, roughly chopped
8 ounces cherry tomatoes, chopped
Handful of cilantro leaves, chopped
4 (10-inch) flour tortillas
3/4 cup grated Oaxacan or Monterrey Jack cheese
1 lime, cut into 4 wedges
