Sticky Aussie Ribs with Coleslaw

Ingredients: 

3kg Australian pork ribs
1 brown onion
2 garlic cloves
1 cup brown sugar
1/4 cup olive oil
1/4 cup tomato paste
2 tbsp Woolworths Select Spicy BBQ Seasoning
1 1/2 tbsp wholegrain mustard
3 tsp dried cumin
1 1/2 tsp salt
Coleslaw to serve


Divide large rib sections into smaller 3-4 rib pieces by cutting between the bones. Put ribs into a large shallow dish. Put all remain ingredients in a food processor. Process until finely chopped and forms a thick paste. Using half the mixture, rub into ribs to coat well all over. Cover. Refrigerate overnight.

Preheat over to 180 degrees C. Transfer ribs to an ovenproof dish and cover with foil, then roast for an hour.

Preheat a BBQ grill to high. Transfer remaining marinade to a saucepan and bring to the boil, then reduce to a simmer. Remove ribs from oven and put on grill. Cook for 15 minutes, turning occasionally, until well browned and slightly charred. Serve with coleslaw on the side.
