Sticky Chicken with Lemon and Garlic

1 lemon, juice and zest
2 big cloves of garlic,grated
4 tbsp(60ml) maple syrup
2 tbsp (30ml) old fashioned grainy mustard
1 tsp (5ml) red pepper flakes (chili peppers)
1/3 cup olive oil ( grape seed oil)
8-12 chicken thighs ( bones less and skinless) (12)

  1. Combine first 6 ingredients in a resealable plastic bag or non reactive shallow container and stir well to combine.
  2. add chicken and remove air from bag and seal,Refridgerate for at least 2 hours ( overnight)
  3. Remove chicken from marinade and place on an oiled gril and barbeque 5 to 6 minutes for large thighs or 4/5 for medium and small thighs. Turn and continue to cool until well-marked on both sides and cooked through.cooked when internal temp is 165f(74c)
  4. Meanwhile pour marinade into a small saucepan and bring to a boil over high heat.
  5. Reduce temperature and boil until it reduces to a glaze.about 5 minutes
  6. Brush over chicken or pour over chicken once cooked.
  7. Transfer chicken to serving dish. Let rest for 5 minutes. Serve hot ,warm or room temperature.
