Stir-Fried Collard Greens with Mushrooms


2-3 servings as side dish
Can substitute another leafy green in like swiss chard or kale


1 Tbsp soy sauce
1 Tbsp rice vinegar
1/4 cup orange juice
1/2 Tbsp corn starch (optional)
2 Tbsp grapeseed oil, or vegetable oil
2 garlic cloves, minced
1 Tbsp freshly grated ginger
1 tsp red chili flakes, or to taste
8 oz brown mushrooms, such as baby bella or shiitake, sliced thinly
2/3 cup red onion slices
1 large bunch of collard greens (about 1.5 lbs), hard stems removed, leaves roughly chopped
pepper to taste
two dashes of toasted sesame oil (optional)
