Stir Fried Vegan Shiitake Mushroom Recipe {Gluten-Free}

Ingredients: 

7 ounces shiitake mushrooms, stems removed, thinly sliced
1 tablespoon extra virgin olive oil
3 cloves garlic, chopped
1 inch piece of ginger, chopped
1 small red bird's eye chili pepper, seeded and diced
1/2 to 1 red pepper, thinly sliced
4 to 6 ounces spinach
2 teaspoon gluten free tamari
sprinkling of toasted sesame seeds as garnish (optional)
