Stir-Fry Walnut Shrimp


2 tablespoons medium-dry sherry (optional)
1 tablespoon reducedsodium soy sauce
1 pound peeled and deveined shrimp, thawed if frozen
1/2 cup walnuts, coarsely chopped
2 tablespoons canola oil
2 tablespoons chopped fresh ginger
1/2 cup reduced-sodium, fat-free chicken broth
3 scallions, whites thinly sliced diagonally, greens diagonally sliced 1" thick
1 tablespoon honey
1 teaspoon rice wine vinegar
1 1/2 teaspoons cornstarch, dissolved in 1 tablespoon water
