Strawberry Shortcake

Ingredients: 

Strawberries:
2 lbs fresh strawberries, stems removed, sliced
2 tsp sugar
2 tbsp all-fruit strawberry preserves
2 tsp lemon juice

Topping:
1/2 cup whipping cream
2 tbsp confectioners sugar
1 tsp vanilla extract
1/2 cup silken tofu

Shortcakes:
1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 tbsp sugar, divided
3 tbsp canola oil
2 egg whites
1 cup plain nonfat Greek yogurt
1 tsp vanilla extract
1 tsp lemon or orange zest
