Stuffed Peppers

Ingredients: 

1 lb. extra-lean ground beef
2 cups (more or less) cooked quinoa
1 large onion, chopped
1 - 2 tsp. chili powder
4 large green peppers
I jar pasta sauce
salt and pepper to taste


Preheat oven to 375°F.

Cook quinoa.

Saute onions until just soft.

Cook beef and drain.

Mix first 5 ingredients just until blended.



Cut peppers in half; remove and discard seeds.

Fill peppers with meat mixture and place in shallow baking dish.

Top generously with sauce, reserving some to serve with peppers.

Bake 45  minutes.
