Summer Corn Soup

6 ears yellow corn, kernels removed (set the kernels aside)
1 onion, roughly chopped
4 sprigs fresh thyme or 1 teaspoon dried thyme
½ teaspoon peppercorns
½ teaspoon kosher salt
½ teaspoon red pepper flakes
2 tablespoons olive oil
1 yellow onion, minced
3 stalks celery, finely chopped
corn kernels from 6 ears of corn, ⅔ cup of kernels reserved
2 cloves of garlic, finely minced
½ teaspoon red pepper flakes
¼ teaspoon kosher salt
finely chopped red pepper or scallions, for garnish (optional)
grated Parmesan cheese, for garnish (optional)
