What you will need: A large pot, a large pan, a baking tray and a strainer.


350g / 3 ½ Cups Penne Pasta
1 Medium Squash (Any yellow variety will do)
Salt & Pepper
1 Large Garlic Clove (Finely Chopped)
1 Tablespoon Olive Oil
½ Teaspoon Dried Red Chillies
100g / 1 Cup Courgette/Zucchini (Diced)
100g / 1 Cup Cherry Tomatoes (Halved)
250ml / 1 Cup Water
½ Teaspoon Dried Basil
Fresh Coriander
Fresh Parsley
Parmesan Cheese (Optional)
