Sun-dried Tomato Alfredo


1 eggplant
4 oz. package sun-dried tomatoes (about 1 1/2 cups)
1 cup boiling water
1 cup soy milk
1 tsp apple cider vinegar
1/2 cup cashews
1/3 cup nutritional yeast
1 tbsp tahini
1 tbsp lemon juice
1 tbsp dijon mustard
2 cloves garlic, crushed
1 tsp paprika
black pepper
several leaves fresh basil, plus extra for garnish
