Sun-Dried Tomato Basil Pesto

Ingredients: 

2- 3.5 oz. Bags of Roland Sun-Dried Tomatoes {I liked these because they aren’t packed in oil and are ready to use}
30 Large Fresh Leaves of Basil
¼ C. Pine Nuts
1 Cup Vegan Parmesan Cheese or OMIT
2 Tbsp. Fresh Lemon Juice
3-4 Extra Large Cloves of Garlic { I'd say this equals about 6-9 regular sized garlic cloves}
¾ C. Extra Virgin Olive Oil
1 tsp. Coarse Kosher Salt
3 Tbsp. Fresh Oregano Leaves
