2 large onions, peeled and sliced

6 to 8 Yukon Gold potatoes, scrubbed and halved

1 (4-pound) boneless sirloin tip roast
1 cup hearty red wine
1 cup beef stock
2 tablespoons tomato paste
2 tablespoons balsamic vinegar
2 bay leaves
½ teaspoon dried thyme leaves
6 carrots, peeled
3 tablespoons cornstarch mixed with 2 tablespoons cold water
