Sweet-and-Sour Tofu with Bok Choy


1 block firm tofu (14 ounes)
about 1/4 cup flour
pinch salt
2 tablespoons safflower, grapeseed, or other neutral oil
1/4 cup lemon juice
1/4 cup honey
1/4 cup soy sauce
1 tablespoon grated ginger
1 tablespoon grated garlic (3 cloves)
2 bunches baby bok choy, rinsed, trimmed and cut into bite-sized pieces
3 scallions, white and green parts chopped and separated
