Sweet Fried Plantains (vegan)

Ingredients: 

Vegetable oil (for frying)
2 firm ripe plantains
Kosher salt
1 cup raw sugar
11/2 tsp cinnamon


1. Heat one inch of oil in heavy bottomed sauce pan until them reads 340

2. Line a large platter with paper towels

3. Peel plantains and discard skin. Slice into 1/4in thick pieces. Fry plantains in oil until it turns golden brown (about 2-4 min- the longer they fry, the sweeter they are). Remove and drain. Sprinkle with salt.

4. Put sugar and cinnamon in bag, drop in warm plantains. Shake to coat. Serve.
