1 egg white
Coconut oil spray or olive oil
½ small red onion, diced
1 garlic clove, minced
1 lb lean ground turkey
Sea salt and pepper, to taste
1 Roma tomato, chopped
⅓ cup Portobello mushrooms, chopped
1 ½ cup low-sodium tomato sauce
1 Tbsp Italian seasoning
1 medium sweet potato, thinly sliced
¾ cup reduced-fat shredded mozzarella
