Sweet Potato Lasagne

Lasagnes can do no wrong. They're the most soul satisfying food around and this one is no exception. It also proves that pasta isn't necessary. With no pasta sheets to boil, it's almost easier to make than a classic lasagne.

Cooking spray
3 large sweet potatoes, peeled and thinly sliced
2 tbsp. extra-virgin olive oil
1 large onion, chopped
2 cloves garlic, crushed
450 g sweet Italian sausage, casings removed
Freshly ground black pepper
450 g marinara
140 g package baby spinach
450 g ricotta
1 large egg, beaten
75 g grated Parmesan
1 tsp. dried oregano
450 g fresh mozzarella, sliced
Freshly chopped parsley, for serving
