5 cups grated sweet potato, about 2 medium sweet potatoes – skin on is fine
1 cup chopped leeks
1/3 cup raw buckwheat flour
2 tablespoons chopped sage
1 1/2 teaspoons minced garlic
2 egg replacer
1 tablespoon sunflower oil
1/2 teaspoon salt
1/2 teaspoon pepper
oil for the pan
optional toppings: applesauce, Greek yogurt, sour cream
