Sweet Potato Shepherd's Pie

Ingredients: 

2 pounds ground beef
2 pounds sweet potatoes, halved
1 head of cauliflower, cut into chunks
2 tablespoons butter
splash of cream
5 medium carrots, diced
4 stalks of celery, diced
1 medium onion, diced
2 cloves garlic, minced
1 bag frozen peas
1 cup mushrooms (any kind), diced
1/4 cup tomato paste
1 cup chicken broth
1 teaspoon thyme
1 tablespoon flour
salt and pepper

  1. Preheat the oven to 400 degrees.
  2. Cut the sweet potatos in half and the cauliflower into large chunks. Steam both until very tender. Once cool, remove the potato skins and mash with cream, butter and salt and pepper. Set aside.
  3. Brown ground beef with salt and pepper.
  4. Once browned, remove beef. Add a tablespoon of olive oil and the diced onions. Cook until soft and starting to brown, about 10 minutes. 
  5. Add the carrots, celery, mushrooms and garlic. Season with salt and pepper. Cook until soft, about 10-15 minutes.
  6. Add tomato paste, chicken broth, flour and thyme. 
  7. Simmer until sauce has thickened, about 5-10 minutes.
  8. Add meat mixture and stir to combine.
  9. Top the meat mixture with the mashed mix. Make ridges with a fork and sprinkle with paprika.
  10. Bake in the oven for 20 minutes or so.
