Sweet Red Pepper Soup Recipe

Notes: 

Tripled the recipe to serve eight people for Christmas lunch entree. Added a 400 gram can of roasted tomatoes to bulk it up a bit. Added puff pastry stars for decoration and instead of bread (lighter than bread before a big Christmas meal, and more festive).

Ingredients: 

2 large garlic cloves, unpeeled
1/4 teaspoon extra-virgin olive oil
3 red bell peppers
1 cup fat-free chicken broth
1 tablespoon reduced-fat sour cream
1 teaspoon 1% milk or water
1 tablespoon minced fresh chives or parsley
