Sweet & Savory Bacon Jam

Notes: 

Makes 1 1/2 to 2 cups (can be doubled or tripled)

Some recipes call for discarding some of the bacon fat before adding the onions. I kept all of the fat but it is personal preference. Hey, if you are going to make bacon jam you might as well go all in!

Ingredients: 

1 pound thick-cut bacon, cut into 3/4-inch pieces
2 small sweet onions, peeled and thinly sliced
1 large shallot (2 cloves), peeled and very thinly sliced
1/2 cup pure maple syrup
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
