Ingredients: 

1 small onion, finely chopped
2 garlic cloves, crushed
2/3 cup vegetable stock
1 pound fresh mushrooms (sliced or quartered)
4 tablespoons white or red wine
2 teaspoons tomato puree
1 tablespoon soy sauce
1 teaspoon chopped fresh thyme
2 tablespoons chopped fresh parsley plus extra for garnish
1 pound tagliatelle (spinach or sun-dried tomato flavors are also good)
salt and pepper
Parmesan shavings for garnish (optional)
