Teriyaki Pulled Jackfruit Sandwiches [Vegan, Gluten-Free]

For the Teriyaki Pulled Jackfruit:
7 ounces fresh jackfruit (or canned in water, see notes)
1/4 cup soy sauce or tamari
1/4 cup water
2 tablespoon rice wine vinegar
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon date syrup
2 tablespoons dark brown sugar
1 tablespoon corn starch/corn flour

For the Asian Slaw:
1/2 a small red cabbage
2 spring onions
2 teaspoon wasabi powder (or 1 teaspoon wasabi paste)
1 teaspoon grated ginger
1 tablespoon mirin
2 tablespoons lime juice

To Serve:
2-3 gluten-free buns
Fresh basil leaves (optional)
