Ingredients: 

1/2 bag dry black eyed peas
8 cups water
8 oz cooked frozen corn
1/2 red onion diced
1/2 red bell pepper diced
JalapeƱo diced to taste
1 Roma tomato diced
2 TB cilantro chopped
2 TB EVOO
1/2 TS cumin
S&P to taste


Rinse, soak peas in 4 cups water at least 3 hours.
Drain, rinse
Add rest of water, peas to pressure cooker. 30 min on 80.

Drain, cool, add remaining ingredients.
