Texas Three Bean Chili & Sweet Chia Cornbread


Texas Three Bean Chili

1 can black beans (15 oz)
1 can kidney beans (15 oz)
1 can pinto beans (15 oz)
1 can fire roasted green chilies (4 oz)
1 can fire roasted tomatoes (15 oz)
1 small onion, diced
3 cloves garlic, minced
1 cup grape tomatoes, halved
1 teaspoon cumin, heaping
1/2 teaspoon chili powder
1/2 teaspoon chipolte or cayenne pepper
1 -2 teaspoon raw cocoa powder
2 cups water
1 tablespoon olive oil
salt to taste
scallions and extra tomatoes to garnish
Nut meat, optional as garnish

Sweet Chia Cornbread

1 cup corn meal, course grind
1 cup spelt flour or flour of choice
1/4 cup chia seeds
5 tablespoons pure cane sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup vegan buttermilk (1 cup non-dairy milk + 2 tbsp lemon juice)
1/3 cup extra virgin olive oil
1 can sweet corn, drained or one/two fresh corn off the cob when in season
